Frozen themed party food – ice and snow jelly shots

jelly shot 4My daughter’s birthday party is in 2 weeks and I’m starting to develop party food to fit with her Frozen themed party. (She’s a little bit obsessed). Ice, snow and Marshmallow are all big parts of the film so for my first creation we’ve got all three combined in these pretty little jellies topped with home made marshmallow.

The jellies are easy enough – shop bought lemon and lime jelly made according to the instructions with blue food colouring stirred in at the liquid stage – you need to add enough to reduce the greenish shade that comes with the jelly. Pour the jelly mix into shot glasses, the ones pictured are glass but for the party they’ll be child friendly plastic.

Wait for the jellies to set then make the marshmallow (recipe below) and pipe onto the top. Sprinkle with neon blue sugar crystals. I’m also planning some purple jellies made with blackcurrant and pink sugar crystals for a bit of variety.

For the marshmallow:

2 large egg whites

100g castor sugar

1 tablespoon glucose syrup (sometimes called glycerine this is available at pharmacies, alternatively you could use golden syrup)

Pinch of salt

1tsp vanilla essence

  • Place all the ingredients in a bowl over a pan of hot water and whisk to combine.
  • Keep the bowl over the hot water and whisk continually for at least 5 minutes until the mixture has thickened and doubled in volume.
  • Allow the marshmallow to cool slightly then spoon into a piping bag and add to the tops of the jellies.
  • Sprinkle with the sugar crystals to finish.
