At last it feels like summer’s here and Sunday was so lovely that we decided we would have a barbecue, helped out by the lovely people at money supermarket who gave us £50.00 to use to take part in the Charcoal challenge. We kept it simple, burgers, chicken skewers and salad. My homegrown elderflower cordial went perfectly as a summer drink mixed with apple juice and lemonade and fresh fruit for desert was delicious we spent £47.87 and everyone had a brilliant time. For those (like me) who worry about undercooked chicken at barbecues the skewer option is very easy and much safer than chicken legs etc. My recipe (if you can call it that) is here.
Chicken Skewers
Ingredients:
- 2 chicken breasts
- 4 small red onions
- 3 or 4 mixed peppers
- Small tub of button mushrooms
- 5 Metal skewers
Method:
- Dice the chicken breasts and mixed peppers
- Peel the red onions and cut into quarters
- Peel the button mushrooms and remove the stalks
- Skewer the ingredients in whatever order you like being careful of your fingers
- Cook either on a BBQ or under a grill
- Ensure the chicken is fully cooked before eating – one of the advantages of small pieces of chicken is that they cook quickly and are easy to check
